There will be a difference. How big? It depends on the watch owner. Nevertheless, the polished centre links will see more scratches as compared to brushed links.
Also noticed that the GMT has polished centre links while the Sub's are brushed. Would there be a big difference in wear and tear if used daily?
I chose a GMT IIc over a Sub c; but in less than 3 months, I started to dislike the highly polished CL, that showed scratches, smudges and oily finger-prints no matter how careful I was. Sold it off and bought the TT GMT IIc - somehow the polished gold doesn't show the scratches as badly as the SS, so that's a keeper for me.

Hmm interesting. What about fingerprints and smudges though? Do they show up less?

Yes, it seems so to me. On the polished gold, I can also easily rub off any fingerprint and smudge with my finger or a cloth and they appear less annoying compared to the polished SS, perhaps due to the different reflectiveness - I think the SS looks more shiny!.
The price difference between the TT and the SS models is about S$2,500 - S$3,000, so I thought it was worthwhile to consider the TT.
i bought a gmt master 2 yesterday, my friend bought a submariner last week. no right or wrong. choose the one u love.
for me the green needle stands out, so i choose gmt master 2 : )

TT and SS models side-by-side:
It does appear that polished SS is the shiniest material, even compared to YG & WG.
