You can change as often as you like, but, whenever u get the new insert, the old insert goes back to them(RSC).

My GMT-II came with the 'coke' bezel but I managed to purchase an all-black bezel and a 'pepsi' one from a London AD 1+ year back (can't remember how much I paid for the bezels though) ... Guess it's still possible to buy the bezels from some of the overseas ADs ...

As of now, no, you can't do that. The GMTIIc uses a ceramic bezel. The 'Pepsi' bezel is metal. ROLEX hasn't produced a 'Pepsi' ceramic bezel yet.
