Quick date/time setting - dont have access to the manual

I have a PAM 312 guys and dont have the manual with me and am travelling. The time has stopped and I guess it needs to be manually rewound also before setting the time and date. In short how do I :

1. Set time
2. Set date
3. Manually wind. (Oh and yes I do know it is an automatic movement watch. Just want to manually wind it to get it started)

How do I do that? I've set the time but nothing is moving. How do I manually wind?
