Oh man.. there are 1000+ watch brands. Definitely more than half are lesser known or even unknown to us. But for good quality watch and yet not mainstream watches, I would suggest:

Steinhart
Mido
Glycine
Bulova

Stowa is also an interesting brand. Revived by Jorg Schauer, it was one of the 5 companies who made b-uhren (bomber pilot) watches for the German Lufftwaffe during WWII. The other 4 are Lange & Sonhe, IWC, Laco and Wempe.
Another one would be Alexander Shorokhoff, he was the watch maker who founder Poljot Int'l IIRC, has since started a new brand under his own name. Very interesting designs and one of the rare modern watch makers who incorporate mechanical alarm movements in watches of their price range.
